Peach Preserves with Orange Bitters
  • Turn ripe summer peaches into a quick, easy preserve with one unexpected ingredient: bitters. Rustic Oak Orange Bitters add a subtle layer of citrus and spice that makes these homemade peach preserves more distinctive than traditional peach jam. No canning required. Just simmer, cool, and refrigerate for a delicious topping for biscuits, yogurt, toast, or ice cream. Since these preserves aren't shelf-stable, keep them refrigerated and enjoy within a week.

    Total Time:    25 Minutes

    INGREDIENTS:

    • 1 lb. Ripe peaches, pitted and chopped
    • ¾ Cup granulated sugar
    • 1 Tablespoon lemon juice
    • 1/8 Teaspoon salt
    • 3 Dashes Rustic Oak Orange Bitters*

    DIRECTIONS:

    1. Note that you do not need to peel the peaches but, if you’d prefer to, add them to a large pot of boiling water for 1 minute. Transfer them to a bowl filled with ice water until cool enough to handle and the peels will slice off easily.
    2. Add the chopped peaches to a pot along with the sugar, lemon juice and salt.
    3. Simmer over medium low heat until the sugar dissolves and the fruit softens. Add the bitters, remove from the heat and allow to cool.
    4. Store in a lidded jar in the refrigerator for up to a week.
